I don’t know why this is a thing, but noodles at my school are always served cold. You mix in the (typically) steaming sauce, which brings the food down to lukewarm temperature.
Of course, if you don’t mix your noodles well with the sauce, you’ll end up with an unpleasant blob of cold noodles in your mouth.
